PENNE ARRABBIATAPenne Arrabbiata

 PENNE ARRABBIATA (Serves 2)

INGREDIENTS

250g penne pasta
Salt to taste
Water for cooking the pasta

For the Arrabbiata Sauce:
1 chopped onion
1 cup mixed coloured peppers
3-4 garlic cloves
4 medium tomatoes
3 Tbsp oil
Salt and pepper to taste
200 ml cooking cream
Dried red chillies to taste

For the Garnish:
Grated Parmesan or cheddar cheese to taste

METHOD

STEP 1
To cook the pasta, boil water in a pot and add a generous amount of salt and cook the pasta for about 8 minutes, then drain off the water.

STEP 2
Process the tomatoes and garlic together in a blender to have the tomatoes in a liquid form. You can also achieve this by using a box grater.

STEP 3
In a hot pan, add little oil, then start cooking the coloured bell peppers (you can also use the green ones only). Cook on high heat until they start to brown.

STEP 4
Add the chopped onions & continue cooking on high heat while stirring until the onions are lightly browned.

STEP 5
Add the blended tomatoes and garlic and allow to simmer on low heat for about 1 minute or until the tomatoes turn into a deep red colour. (You can also use store bought pasta sauce instead. Just skip the blended tomatoes and add this when onions are cooked.) Add salt & pepper to taste and stir.

STEP 6
Finally, add the chillies for some heat & stir well. Add little water if the sauce is dried up.

STEP 7
Add the cooked pasta & mix well into the tomato sauce. Be careful not to add more pasta than the tomato sauce.
The idea is to have the sauce cover the pasta.

STEP 8
You can also add some whipping cream to have a creamy taste if you have some available. This is optional.

STEP 9
Finally, add a generous amount of grated Parmesan cheese for that extra flavour (alternatively, you can use cheddar cheese) & stir well then turn off the heat. The whole cooking process will take about 3 minutes, and this meal is best served fresh. When you reheat it, it will not be as tasty as when fresh!
