RUSTIC OX TONGUE SOUP
RUSTIC OX TONGUE SOUP
INGREDIENTS
1 whole tongue
1 Tbsp apple cider vinegar
Twice as much water as the tongue
3–4 laurel leaves
3–4 twigs thyme
2 large onions
3 carrots
1 tsp peppercorns
1 can of crushed tomatoes
3 large potatoes
2 dried ancho chillies
1 can borlotti beans
A cup of chopped parsley for garnish
Crème fraiche for garnish
METHOD
STEP 1 (Boiling The Ox Tongue)
Begin by boiling the whole tongue in a pot with water, apple cider vinegar, laurel leaves, fresh thyme, onions, carrots and peppercorns for about 5 hours or so, until the skin is easily peeled off. Strain the broth & peel the tongue and cut into pieces,
STEP 2 (Preparing The Soup)
In a separate pot fry chopped onions, garlic, crushed tomatoes, more fresh herbs add to that carrot and potatoes and dried ancho chillies, and boil till all the vegetables are tender then add some ready borlotti beans to it. Lastly, add the cut tongue pieces to the soup!
STEP 3 (Serving The Soup)
When serving the soup in a soup bowl, add chopped parsley and a spoonful of crème fraiche.
