BUTTER CHICKEN

 BUTTER CHICKEN

INGREDIENTS

3 whole yellow onions
Ghee for frying
White jeera 1 tsp
Red chillies 1 to 2
Garlic minced 1 tsp
Ginger minced 1 tsp
Dhana jeera 1 tsp
Garam Masala 1 tsp
Turmeric powder 1 tsp
Chili powder to taste (1/2 tsp)
4 finely chopped tomatoes
⅔ cup sour cream
⅓ cup full cream
Salt to taste
Chicken pieces 500gm
Coriander sprigs for garnish

METHOD

STEP 1 (Preparing The Sauce)

In a pan fry the onions in ghee, and add the white jeera, red chillies, garlic and ginger. Once the onions have caramelized, add the dhana jeera, garam masala, turmeric powder, chilli powder, and continue frying that for a couple of minutes. Next, add the finely chopped tomatoes and cook, once the tomatoes leave the side of the pan, add in the sour cream and full cream and continue cooking for a few more minutes. Blend this mixture into a sauce consistency and put it in a cast iron pot with a lid in the oven and bake it for about 2 hours at 175 C.

STEP 2 (Preparing The Butter Chicken)
Fry The chicken pieces in butter or ghee until you notice clear juices from the chicken. Now add the sauce and salt to taste, and cook for a few more minutes, making sure the chicken is well covered and emersed in the sauce.

STEP 4 (Plating)
In a plate place your rice and serve with butter chicken on top. Garnish with fresh coriander leaves & serve hot! You can also serve this with naan.
