COCONUT PRAWN CURRY WITH AROMATIC DILL RICE

Serves 3-4

Cooking time: 15 minutes

INGREDIENTS

2 medium-sized onions (chopped)
10g of ginger (chopped/paste)
4 cloves of garlic (chopped/paste)
4 tsp curry powder
5 tomatoes (puréed in blender/cut into small cubes)
¼ peppers- yellow/green/red each (cubed)
½ cup cooked peas (optional)
½ kg king prawns (deveined)
¾ cup coconut cream
Salt to taste

METHOD

STEP 1
On medium heat, start cooking your chopped onions and ginger.

STEP 2
After about 5 minutes on medium heat, the onions will start to brown, keep stirring to make sure it’s evenly browning. Add garlic at this stage and stir to mix with the onion.

STEP 3
When lightly browned, add the curry powder and stir well and cook for 1-2 minutes.

STEP 4
When nice and golden brown in colour, add the chopped/blended tomatoes and stir. Allow cooking while covered, until it forms a nice thick sauce. This will take about 5 minutes on medium heat when using chopped tomatoes. Stir occasionally to ensure even cooking. Note: it will take less time when using blended tomatoes.

STEP 5
Add salt at this stage as well as the coconut cream. Taste and adjust the seasoning. If using coconut powder, dissolve it with hot water before adding to the curry sauce.

STEP 6
Add the peppers, peas and the raw prawns at this stage. Stir and cover. Let it cook for about 5 minutes while covered. When cooked, the prawns will turn reddish in colour and if you cook them longer, they will be chewy and rubbery.

STEP 7
Turn off the heat and add chopped dhania to the dish!

 

Once ready serve hot with rice mixed with dill.
