Here’s a fun cookie recipe that is colourful, easy to make and loaded with yumminess! You can also make chocolate chip cookies with this by adding chocolate chips and skipping the M&Ms® or Smarties® candies. The thing to note is that these cookies spread out when baking, so leave room for that when scooping the dough before baking. They have crisp edges and soft and chewy centres and the crunch from the candies make them an interesting bite to the last crumb! Try them with the kids and have fun doing it.

M&M’S® COOKIES

 M&M’s® COOKIES RECIPE

This recipe will yield 15 large cookies

INGREDIENTS

2 cups (260 grams) all-purpose flour
1 ¼ teaspoon baking soda(Bicarbonate of Soda)
¼ teaspoon salt
3/4 cup (170 grams) unsalted butter/margarine at room temperature
2/3 cup (120 grams) granulated white sugar
2/3 cup (120 grams) firmly packed light brown sugar
1 large egg
1 large egg yolk
1 ½ teaspoon pure vanilla extract
1 cup (200 grams) M&Ms® or Smarties® candies

METHOD

STEP 1
When all the ingredients are gathered and measured, preheat the oven to 180C and line two baking trays with a greaseproof paper. You may also lightly grease the baking sheets with butter/margarine if you don’t have the greaseproof paper.

STEP 2
In a bowl, whisk together the flour, salt and baking soda.

STEP 3
In another bowl, using an electric mixer or hand whisk, beat the butter and sugar until light and fluffy (about 3 minutes). Scrape down the sides of the bowl. Add the yolk, egg and the vanilla, beating well until well combined.

STEP 4
Gradually add the flour mixture to the creamed mixture and beat just until incorporated. Scrape down the sides of the bowl as needed, the mixture will be firm and if the batter is soft, cover and refrigerate for 30 to 60 minutes or until firm. If too soft, it will be harder to work with.

STEP 5
Using an ice cream scoop or two large spoons, scoop balls of the batter and place on the baking trays, spacing them to allow the cookies to spread when cooked.

STEP 6
Gently flatten each ball into a circle about 1cm thick. Take your M&Ms® or Smarties® candies and completely cover the tops of the cookies.

STEP 7
Gently press the candies into the dough and bake for about 12-15 minutes, rotating the baking sheets halfway through the baking time(to avoid browning on one side) or until the cookies are light golden brown in colour and just set around the edges.

STEP 8
They will still seem a little soft in the centre but they will firm up as they cool. For a crunchier experience, allow them to bake for a few minutes longer.

STEP 9
Remove from the oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.
