Chef Khan’s Fried Chicken- Another Mouthwatering Recipe By Our Very Own Chef Khan

Ingredients (For Six Servings)

¾ kg of boneless chicken cut into medium sized cubes

¾ cup of corn flour to dust the chicken pieces (season flour with salt & pepper)

Oil for deep frying

For The Marinade-

1 teaspoon of salt, ½ a teaspoon of pepper,1 squeezed lemon juice, 1 teaspoon of chili flakes, 1 teaspoon of ginger, 1 ½ teaspoon of garlic paste. Mix well together.

For The Batter-

1 cup all-purpose flour, 1 teaspoon of baking powder, I teaspoon of salt & pepper (1 teaspoon of cayenne powder optional) ,  ¾ to 1 cup of ice cold water. Whisk the following till smooth should not be too runny nor very thick.

Method

1. Marinate the chicken cubes for at least 30 mins in the marinade

2. Once the chicken is marinated for 30 minutes take each chicken piece and coat it with the batter nicely

3. Dust the battered chicken pieces in the seasoned corn flour making sure it is well covered

4. Lastly fry the chicken pieces for about 7 minutes on medium heat

 

Optional Sauce

50 grams butter or blue band
½ teaspoon salt
1 ½ teaspoon of chili powder
1 ½ tablespoon of lemon juice
10 grams Chopped cilantro
Put all these ingredients into a small pot and heat up till butter is melted and give it a good stir. Finally pour sauce on top of your chicken and garnish with chopped cilantro
