WHOLE WHEAT BREAD

WHOLE WHEAT BREAD RECIPE

INGREDIENTS

2 cups (260 gms) whole wheat flour
½ cup (65 gms) all-purpose flour
2 teaspoons (1 packet/10 grams) instant yeast
2 tablespoons sugar or honey (if using honey, add honey after the milk)
1 teaspoon salt
1 cup (240 ml) milk, (heated to 50-55°C) for instant yeast
2 tablespoons (30 mL) vegetable oil
1 egg
about ¼ cup additional all-purpose flour

METHOD

STEP 1
Place flours, yeast, sugar & salt in a large mixing bowl.

STEP 2
Stir in milk, followed by oil and egg. Use a wooden spoon to stir the mixture for about 3-4 min.

STEP 3
Add the remaining ¼ cup of all-purpose flour a little by little, to make a soft dough.

STEP 4
Use your hands to knead until the dough starts to peel off your container.

STEP 5
Transfer from the container to a floured surface and make about 50 turns (i.e. folding the dough over and over again until you count 50).

STEP 6
Cover and rest the dough for about 10 minutes.

STEP 7
After 10 mins of resting, shape the dough into a loaf and place on a greased loaf pan.

STEP 8
Cover with a towel and let rise in a warm spot until it’s one inch taller than the pan, for about 40 minutes. You can use your oven while at 50ºC(the lowest setting).

STEP 9
Bake for 30 minutes in a preheated oven at 180°C. After the first 15 minutes, you can cover the top of the loaf with a foil tent to prevent over-browning.
