Tandoori Paneer Tikka Salad

Tandoori Paneer Tikka Salad is a perfect recipe for all you vegetarians out there! This irresistible, healthy salad is delicious and will leave you craving for more!

TANDOORI PANEER TIKKA SALAD

TANDOORI PANEER TIKKA SALAD(Servings For 2-3)

INGREDIENTS

2tbsp olive oil
1-1½ tsp chilli powder
1½ tsp dhania jeera powder (coriander & cumin)
½ tsp garam masala
½ tsp salt (salt to taste)
1½ tsp mango powder (optional)
1 tbsp fresh coriander (roughly chopped)
200-250g paneer cubes (cottage cheese)
A handful of lettuce (roughly chopped into 1inch strips)
½ mango cut into cubes
1 small red, yellow & green bell peppers cut into cubes
1 cucumber chopped
½ avocado cut into cubes
2-3 slices of bread of your choice (cut into small squares)

INGREDIENTS FOR THE DRESSING

1 cup yoghurt
½ avocado
A handful of coriander
A handful of mint leaves
1 tbsp honey
Salt to taste
1 tsp black pepper powder or crushed
1 tbsp olive oil
dash of white vinegar (optional)
1 small lemon (zest & juice)
For Garnish (Optional) – 4-5 pieces of chopped olives or walnuts

METHOD

STEP 1
To a non-stick frying pan add 1tbsp olive oil then add the chilli powder, dhania jeera, garam masala, mango powder and salt. Mix for a minute on low heat then add the ½ cup yoghurt and coriander and mix for another minute or so until fragrant. Turn off the heat and add the Paneer cubes to this and coat with the mixture thoroughly then leave aside and allow to marinate for 10-15 minutes.

STEP 2
On a grill or the same non-stick frying pan add 1-2 tbsp of oil and once hot add the marinated paneer. Cook on each side for 1-2 minutes until slightly toasted, then take it out on a side plate.

STEP 3
In your frying pan add a tbsp of olive oil then toss the bread pieces lightly in this toasting evenly on both sides, then take it out in a side plate. (Optional: You can add a pinch of salt & black pepper whilst toasting).

STEP 4
For The Dressing: To your blender, add ½ cup yoghurt, a handful of mint leaves & coriander leaves and avocado & blend all together until smooth. Now add this to the frying pan on low flame, along with the lemon juice & zest, salt, black pepper, olive oil, vinegar & honey & mix well.

STEP 5
To the dressing add all the chopped veggies of your choice then toss & mix well. We have added lettuce, bell peppers, cucumbers, half an avocado & mango.

STEP 6
Pour out the veggies with the dressing in a large salad bowl. Then scatter the bread & paneer pieces generously on top. Garnish with either walnuts or olives!
