Sweet Chilli Chicken Salad – Chef Khan’s Delectable Recipe
SWEET CHILLI CHICKEN SALAD (serving for 2)
1 ½ boneless chicken breast cut into thin strips (marinate with ½ teaspoon of salt, ¼ teaspoon of pepper
& ¼ teaspoon of Cajun spice (optional) – let it marinate for at least 20 minutes)
¼ cup corn flour to dust the chicken
1 medium sized onion cut into julienne (strips)
1 capsicum cut into julienne (strips)
Juice of ½ a lemon
20 grams of roasted cashew nuts
1 ½ teaspoon of honey
4 tablespoons of sweet chilli sauce
¼ teaspoon of salt and pepper
¼ bunch of coriander chopped
1 teaspoon of sesame oil
1 piece of lettuce to bed the salad
3-4 pickled black olives to garnish (optional)
Once chicken has marinated for 20 minutes dust it with the corn flour and fry the chicken for at least
5-6 minutes then set aside to let cool.
In a mixing bowl put in your onions, capsicum, roasted cashew nuts, honey, sweet chilli sauce, lemon
juice, sesame oil and your cooked chicken.
Season your salad with salt and pepper, add your chopped coriander and mix it well then let it chill in
the fridge for at least 30 minutes.
Lastly to plate, bed your lettuce on a plate and place your salad on it and garnish with pickled olives.
