SPINACH CAULIFLOWER SOUP SPINACH CAULIFLOWER SOUP RECIPE
INGREDIENTS
1 small bunch spinach (roughly chopped)
1/2 kg cauliflower (roughly chopped)
2 onions (chopped)
1 carrot (chopped)
4 cloves of garlic (sliced)
2-3 tbsp oil
500ml water
Salt and pepper (to taste)
METHOD
STEP 1
Cook the onion and garlic with little oil for about 1 minute or until soft.
STEP 2
Add the cauliflower and carrot and continue cooking on medium heat for 2 minutes.
STEP 3
Add the spinach, stir and finally add water to just cover the vegetables. Season with salt and pepper to taste.
STEP 4
Bring the soup to a simmer and cook for about 15 minutes or until the cauliflower is fully cooked.
STEP 5
Blend the soup when it has slightly cooled to avoid damaging the blender and do it in batches if need be depending on the capacity of your blender.
Reheat the soup & serve hot with garlic bread or toasted bread!
