Spiced Pumpkin Cake By Chef Hemedi

SPICED PUMPKIN CAKE RECIPE

INGREDIENTS

4 eggs
Sugar 250 grams
Cooking oil 250 ml
Cooked pumpkin 450 grams
Flour 480 grams
Baking powder 1 tablespoon
Cinnamon 1 tablespoon
Bicarbonate 1 teaspoon
Salt and ginger ½ teaspoon
Cloves ¼ teaspoon
Raisins or sultanas 90 grams
Chopped roasted nuts 90 grams

Note:
Wash your hands with soap and warm water. Clean your oven with a damp cloth soaked in warm soapy water. Now set the heat to 200*C to preheat. Grease a clean and round 8-inch baking tin then line with parchment paper at the bottom & put aside. Measure out your ingredients carefully and precisely.

METHOD

STEP 1
In a clean stainless steel bowl, sieve together all the dry ingredients and set aside.

STEP 2
Pick another clean mixing bowl and using a whisk, beat together the eggs, sugar, oil and pumpkin until well blended.

STEP 3
Fold in the dry ingredients into the egg and oil mixture until well combined taking care not to over mix so as not to activate the gluten in the flour.

STEP 4
Lastly, add the sultanas in the previous mixture, stir once or twice just to mix them in.

STEP 5
Pour the cake mixture into your prepared baking tin and bake in the middle of the oven for approximately 40 to 45 minutes or until baked. Let it cool in the tin for at least 10 minutes before inverting it on a wire rack to cool completely.
