SIRIMON’S HALLOUMI & MUSHROOM BAGEL SANDWICH

SIRIMON’S HALLOUMI & MUSHROOM BAGEL SANDWICH RECIPE BY CHEF AAKSHAR JOSHI
(Serves 4)
INGREDIENTS
250gms Sirimon halloumi cheese
Oil (for grilling & saute)
1 ripe avocado
Lettuce – 8 leaves
3 tbsp pesto sauce
100g sliced mushrooms
4 bagels
Cherry tomatoes for garnish
METHOD
STEP 1
Cut the Sirimon halloumi cheese into 8 rectangular shapes of about an inch each & grill with a little bit (about 10ml) of oil until golden brown on both sides (approximately 3 minutes on each side).
STEP 2
In a separate non-stick pan sauté the mushrooms in about 10ml of oil and stir in the pesto sauce.
STEP 3
Slice & lightly toast the bagels on both sides.
STEP 4
Peel & mash the avocado in a bowl.
STEP 5
To assemble place a slice of toasted bagel on a serving plate, then add the toppings in the order; first the lettuce (2 leaves), then some mashed avocado, then some mushroom with pesto sauce, then your grilled Sirimon halloumi cheese (2 pieces) and lastly the other half of bagel on top.
Serve with cherry tomatoes on the side!
