ROSEMARY LEMON ROAST CHICKENrosemary lemon roast chicken

 ROSEMARY LEMON ROAST CHICKEN RECIPE

INGREDIENTS

1 whole chicken
1 large white onion (sliced)
3-4 cloves garlic
1 lemon (sliced thin)

FOR THE MARINADE

1 cup oil
small bunch rosemary
2 tbs salt
2 Tbsp black peppercorns

METHOD

STEP 1
To prepare the marinade, add all the ingredients in a food processor or a blender and blitz everything together until all the rosemary is finely chopped then place in a small container.

STEP 2
For the chicken, cut it in half from the back only and open it up so it can be flat with the great side up then place it in a suitable bowl and pour the marinade on top. Cover the bowl for about 1 hour and keep at room temperature.

STEP 3
Slice the onions and garlic thinly and place in an ovenproof dish/pan. Then add the thinly sliced lemons and mix with the onions to form a bed on which the chicken can be placed, then place the chicken on top of the onions, breast side facing up.

STEP 4
Roast the chicken in a hot oven at 220ºC, turning down the heat after 25 minutes to 180ºC or after the chicken is evenly browned. the total cooking time is about 45 minutes but you can also remove the chicken when no blood is coming out from the chicken bones.

STEP 5
Midway into cooking, you can baste some of the remaining marinade, to prevent the chicken from drying.
Serve hot after cutting into desired pieces together with the onions and lemon mixture at the base of the chicken together with the gravy.
