ROSEMARY & GARLIC CHOPS
ROSEMARY & GARLIC CHOPS RECIPE
INGREDIENTS
4 tablespoons of orange juice
4 tablespoons apple cider vinegar
4 cloves garlic, crushed
4 teaspoons rosemary, finely chopped
1/2 cup of olive oil
16 lamb loin chops
4 zucchinis, sliced diagonally
4 red capsicums, cut into thick strips
500g cherry tomatoes
120g mixed salad leaves, to serve
Salt to taste
METHOD
STEP 1
Preheat your barbecue grill or chargrill on medium-high.
STEP 2
In a mixing bowl, mix the orange juice, vinegar, garlic, rosemary and half of the oil. Then add in your lamb chops to the marinade, turn to coat & set aside for 20 minutes to marinate.
STEP 3
Combine your vegetables and remaining oil in a separate bowl. Cook, turning, until tender and browned. Remove on a plate
STEP 4
Season the lamb chops with salt and then cook on the grill for 5 minutes on each side.
Serve with vegetables and salad leaves!
