Since it’s almost Madaraka day, Chef Aakshar has an amazing Kenyan recipe for all the viewers; Roasted Whole Snapper With Ugali! Ugali is a Kenyan staple food and all-time favourite. It is popularly eaten with fish, meat stew, vegetables, or nyama choma & kachumbari. It is therefore fitting to have this Kenyan dish fish with ugali as the Madaraka Day Special!  ROASTED WHOLE SNAPPER WITH UGALI RECIPE

INGREDIENTS FOR THE UGALI

4 cups of water
3 cups of maize flour/ugali flour

METHOD

STEP 1
In a pan let the water get to a rolling boil then slowly add cup by cup of maize meal stirring constantly.

STEP 2
Reduce the heat and continue stirring until stiff.

INGREDIENTS FOR THE ROASTED FISH

1 large whole fish
3-4 tbsp olive oil
2 large clove garlic, peeled and minced
1 lemon, halved
fresh herbs (such as rosemary and thyme)
sea salt & freshly cracked black pepper to taste
1 tsp garlic powder

METHOD

STEP 1
Preheat oven to 200C, line a baking tray with aluminium foil and grease with oil.

STEP 2
Give the fish a good wash and dry with a paper towel, then use a sharp knife to lightly score the top of the fish in diagonal lines about 1-2 inch apart.

STEP 3
Brush the fish slowly and gently (to avoid damaging the fish) on both sides with the oil. Then briefly brush the inner cavity with oil as well.

STEP 4
Slice the lemon into slices, and stuff those as well as the garlic and herbs into the cavity of the fish, making sure the garlic is nicely inside and covered well to allow the flavour to be exposed.

STEP 5
Season the outside with salt and pepper and some lemon juice.

STEP 6
Roast for 18-20 minutes, or until the fish reaches an internal temperature of 145°F and flakes easily with a fork. (Cooking time will vary depending on the size as well as the variety of your fish).

Serve your fish warm with ugali and enjoy!!
