ROASTED PEPPER & ONION SOUP RECIPE
Serves 3-4
INGREDIENTS
3 red peppers
1 yellow pepper
1 onion (chopped)
2 garlic cloves
750ml water
1 tbsp plain flour
Salt and pepper (to taste)
METHOD
STEP 1
Place the whole peppers on a gas stove and allow to burn while turning until all the skin turns black.
STEP 2
Place the blackened peppers in a bowl and cover them and allow them to cool. This will make it easier to peel off the blackened skin of the peppers, which you should discard.
STEP 3
In a suitable pot, fry the onion and garlic for 2 minutes or until soft then add the roughly chopped peppers & allow to cook for a minute.
STEP 4
Add the water and seasoning and allow it to come to a boil.
STEP 5
Reduce the heat and allow to simmer whilst covered for a further 5 minutes.
STEP 6
Leave to cool slightly, then puree in a blender until smooth.
STEP 7
Return to the pot and reheat until hot, while you taste and adjust the seasoning.
Serve hot with bread and garnish with cream or plain yoghurt!
