Roasted Honey Chicken With Veggies

Roasted Honey Chicken With Veggies is a complete family meal that can be devoured on its own without any accompaniments! Try this recipe & you will definitely add it to your ‘favourite family meal’ list! 

ROASTED HONEY CHICKEN WITH VEGGIES

INGREDIENTS FOR THE CHICKEN

1kg chicken (cut in pieces with skin on)
2-3 tbsp oil
2 tbsp honey
2-3 garlic cloves (crushed)
2 tbsp freshly ground pepper
1 tbsp mixed herbs
1tbsp fresh rosemary
1tbsp soy sauce
Salt to taste

INGREDIENTS FOR THE POTATOES, TOMATOES & ONIONS

3-4 tomatoes (each tomato cut into 4 pieces)
6 potatoes (medium-sized with skin on, cut into 4 pieces)
2 medium-sized onions (cut in quarters and separate layers)
2 cloves garlic
1-1½tsp salt (salt to taste)
2 tsp freshly ground pepper
2 tbsp oil
1 tsp mixed herbs
1 tsp rosemary (fresh)

METHOD

STEP 1
In a large bowl add the oil, salt, mixed herbs, garlic, honey, pepper & soy sauce and mix well. Add your chicken into this mixture and mix well with your hands and leave to marinate for about an hour.

STEP 2
In a separate bowl add the salt, oil, mixed herbs, rosemary, garlic & pepper & add the potatoes and mix well.

STEP 3
Prepare the oven tray by placing foil on it & preheat your oven for 15 mins.

STEP 4
Add the potatoes & marinated chicken pieces to the tray & spread it out & let it all cook on very low heat. The chicken will take about one to one & a half hours to cook. Keep turning chicken & potatoes every 20mins to avoid charring on one side.

STEP 5
In the same bowl that you added the potatoes toss in your tomatoes & onions & when your chicken is almost done for the last 15 mins or so add in the tomatoes & onions.

Tip: If you feel your chicken is getting dry you can add the remaining marinade that was used for the chicken.
