Pumpkin Pie By Chef Aakshar Joshi – H&S Halloween Special

It’s almost Halloween so why not have some delicious pumpkin pie? That’s right!! This week Chef Aakshar’s pumpkin pie recipe should be on top of your menu. Try out this delicious recipe & let us know your thoughts!

INGREDIENTS For The Base

3 cups flour
1 tbsp granulated sugar
1/4 tsp salt
450 frozen unsalted butter (2 sticks)
3tbsp ice water

INGREDIENTS For The Filling

500gms of pumpkin
300ml whipped cream
250gms sugar
30gms cinnamon

METHOD For The Base

STEP 1
In a bowl, mix the ingredients together then set it in a round pie tray and blind bake for 40mins at 140c.

METHOD For The Filling

STEP 1
Cut the pumpkin into cubes then add to a pot and bring to a boil.

STEP 2
In a mixing bowl whip half the cream till stiff.

STEP 3
Blend the pumpkin with the cream to form a puree.

STEP 4
Season the puree with the sugar and cinnamon and fold into the remaining whipped cream.

STEP 5
Put the filling into the pie and leave in the fridge to set before serving.
