PUMPKIN PIE
PUMPKIN PIE RECIPE
INGREDIENTS For The Base
3 cups flour
1 tbsp granulated sugar
1/4 tsp salt
450 frozen unsalted butter (2 sticks)
3tbsp ice water
INGREDIENTS For The Filling
500gms of pumpkin
300ml whipped cream
250gms sugar
30gms cinnamon
METHOD For The Base
STEP 1
In a bowl, mix the ingredients together then set it in a round pie tray and blind bake for 40mins at 140c.
METHOD For The Filling
STEP 1
Cut the pumpkin into cubes then add to a pot and bring to a boil.
STEP 2
In a mixing bowl whip half the cream till stiff.
STEP 3
Blend the pumpkin with the cream to form a puree.
STEP 4
Season the puree with the sugar and cinnamon and fold into the remaining whipped cream.
STEP 5
Put the filling into the pie and leave in the fridge to set before serving.
