POUND CAKE RECIPE

INGREDIENTS

240 grams of butter
300 grams granulated sugar (1st part)
100 grams granulated sugar for whisking egg whites (2nd part)
4 medium-size eggs (separated)
350 grams Flour
250ml milk
15 grams of baking powder
15 ml vanilla essence
Grated rind of one orange and one lemon

Note:
Wash your hands with soap and warm water. Clean your oven with a damp cloth soaked in warm soapy water. Now set the heat to 200*C to preheat. Grease a clean and round 8-inch baking tin then line with parchment paper at the bottom & put aside. Measure out your ingredients carefully and precisely.

METHOD

STEP 1
In a clean mixing bowl, use a hand cake mixer to cream together the butter and 1st part sugar until light and fluffy. Be sure to scrape the bowl with a spatula to have the whole mixture creamed evenly. Add the egg yolks one at a time and continue beating until well incorporated.

STEP 2
Sieve together flour and baking powder then fold into the butter mixture while alternating with milk. Be sure to start with flour then add in your vanilla essence and the rind. Stir till you get a smooth batter taking care not to over mix.

STEP 3
In a clean bowl, whisk the egg whites until almost stiff then add the 2nd part sugar gradually as you continue whisking until a stiff peak forms. Fold into the batter making sure you do not beat it in. after it’s just mixed, pour the batter into your greased baking tin and place at the centre of the oven. Reduce the heat to 180*C and bake for 40-50 minutes or until baked.

STEP 4
Remove from the oven once done and allow the cake to cool in the tin for 15 minutes before inverting it on a wire rack to cool completely.

STEP 5
Ice by dusting with icing sugar and serve with a hot or cold beverage of your choice.
