PENNE MEATBALLS BAKEpenne meatballs bake PENNE MEATBALLS BAKE RECIPE

Serves 2

INGREDIENTS

2tsp Oregano
250ml. Tomato Sauce
200g Rigatoni/Penne Pasta
300g meatballs(Chicken or Beef)
1 French Roll(optional)
2 Garlic Cloves
100g Grated Parmesan
150g Shredded Mozzarella
¼ tsp. Red Pepper Flakes
Cooking oil

METHOD

Cooking The Pasta

STEP 1
Once water is boiling, add pasta and cook until al dente approximately 11-13 minutes.

STEP 2
Reserve the ½ cup pasta’s cooking water & drain the pasta in a colander and set aside.

While pasta cooks, make meatballs…
Sear The Meatballs

STEP 1
Place a medium-sized non-stick pan over medium heat and add 1 tsp olive oil. Then add meatballs to a hot pan and stir occasionally until browned all over, for approximately 3-5 minutes.

Finish The Meatballs

STEP 1
Add the tomato sauce, oregano and reserved pasta cooking water to the pan & bring to a boil. Once boiling, cook until meatballs are cooked through, (3-5 minutes). Stir in pasta. Remove from the cooker.

Bake The Meatballs To Finish The Dish

STEP 1
Transfer the pasta and meatballs to the prepared casserole dish. Top with mozzarella and place on a prepared baking sheet to catch any drips.

STEP 2
Halve French roll, if necessary. Place on an empty side of the baking sheet, cut side up, and top with remaining garlic and 1 tsp. olive oil.

STEP 3
Bake in a hot oven(200ºC) until the cheese is melted and the roll is lightly browned, 5-7 minutes.

STEP 4
Plate dish, garnishing pasta with red pepper flakes (to taste).
