Passion Fruit Cheesecake By Chef Raphael – A New Year’s Recipe

With 2020 around the corner, Chef Raphael has the perfect dessert in store for you this New Year; Passion Fruit Cheesecake! A wonderfully textured, soft & creamy cheesecake with a tropical touch, has to be on your list this New Year’s if you are entertaining guests! We recommend trying the cheesecake with the passion fruit topping, however, according to our Chef himself “If you don’t have passion fruit or like it, you can use a berry topping or even a pineapple one using the method I have indicated. You can also skip the topping altogether and have it plain.”

 PASSION FRUIT CHEESECAKE RECIPE

INGREDIENTS FOR CHEESECAKE

125g digestive biscuit (crushed)
Unsalted butter/margarine melted
500g cream cheese (at room temperature)
Lemon zest (from 2 small lemons)- Finely grated
4 eggs
160gm sugar

INGREDIENTS FOR THE TOPPING

10 passion fruits (170g of pulp)
55g Sugar
1tbsp cornflour
80ml water

METHOD – For The Topping

STEP 1
Cook the passion fruit pulp in a small pan together with the sugar on low heat.

STEP 2
Melt the margarine and mix with the crushed digestive biscuits and spread evenly on a base of a 20-inch spring foam pan. Place in the fridge to allow to set.

METHOD: For The Cheesecake

STEP 1
Crush the digestive biscuits or process in a blender until there are no big pieces.

STEP 2
Dissolve the cornflour in water and add to the passion fruit and allow to simmer until it’s thickened. Refrigerate & allow to cool in the fridge.

STEP 3
Meanwhile, place the cream cheese in a bowl, add sugar and the lemon zest then mix well. Add the eggs one at a time mixing well before adding the next. The mixture should a thick consistency.

STEP 4
Pour the thick consistency mixture into the digestive base and bake in a pre-heated oven of 160ºC. It will take about 35 minutes to bake.

STEP 5
Finally, the cheesecake is ready when it’s firm on the side and a little wobbly at the centre and a little browned on the sides. Allow to cool and remove from the pan.

STEP 6
Spread the passion fruit topping evenly and place in the fridge to be chilled. Serve chilled.
