PANCETTA CHICKEN RECIPE
INGREDIENTS
3 skinless, boneless chicken breast halves
3 thin slices pancetta
Salt & pepper to taste
1 pound green beans
2 tbsp olive oil
Lemon wedges
METHOD
STEP 1
Heat the oven at 200c & line 2 baking trays with aluminium.
STEP 2
Wrap 2 slices pancetta over each piece of chicken and tuck the ends underneath. Sprinkle the black pepper & some salt & place the chicken pieces on the first tray.
STEP 3
On the second baking tray, toss 1 pound green beans with 2 tablespoons olive oil, and season with salt and pepper.
STEP 4
Place both baking trays in the oven and roast for 30 minutes or until the chicken is cooked through.
Serve hot with lemon wedges!
