Prawns Swahili Recipe
INGREDIENTS
250 grams prawns cleaned, shelled & deveined
1/2 tsp turmeric powder
1/2 tsp cardamom powder
3 fresh chillies deseeded and cut lengthwise
1 medium onion finely minced
3 cloves of garlic minced
1 small raw mango grated finely
1 coconut creamed
salt to taste
white peppercorn powder to taste
1- 2 tbs ghee
METHOD
Marinate the prawns in salt, garlic (use half minced garlic), lemon juice & white peppercorn powder for 30 minutes.
Heat a clay pot & add some ghee (clarified butter), saute the onions until clear then add the remaining garlic, chilli & raw mango. Cook it down until all are cooked but not browned. In a bowl add the coconut cream & whisk the turmeric powder and cardamom powder. Now pour this on the onions cooking & bring to a boil. Once slightly bubbling take off heat & blend all to make a smooth sauce, then add back & cook a bit more for 5 minutes. Let it simmer, once sauce has a nice consistency add the marinated prawns & cook for 3-4 minutes only or prawns will loose it’s texture and become rubbery and overcooked. Check seasoning and adjust accordingly!
Serve with coconut rice!!YUMMY
