JD’s Delicious & Easy Chicken Mandi Recipe By Sunny

Mandi is a traditional Yemeni dish that consists of aromatic rice with tenderised meat usually mutton, chicken or lamb. Everyone whether fasting or not should try this delicious & fragrant chicken mandi Recipe this Ramadan!

How To Make Easy Chicken Mandi At Home

Chicken Mandi Recipe

INGREDIENTS

1 chicken cut in quarters (with skin on)
2 tbs mandi spice
2 cups basmati rice
1 large red onion minced
2 tbs garlic paste
4 cups hot water
5 tbs ghee or butter
A pinch of saffron colour
1/2 preserved lime

Ingredients For Mandi Spice

1 tbs whole coriander seeds
1 tbs cloves
1 inch piece of dry ginger root
3 bay leaves
1 tbs black pepper corns
1 tsp cummin seeds
1 whole nutmeg
Method-Dry roast all of the above and grind them to a powder

METHOD

STEP 1

Stab the chicken with a fork and rub in the 1 tbs mandi spice mix along with the salt and saffron colour. Let it marinate for 3 hours or overnight if possible.

STEP 2
In a large oven proof pot add ghee, sauté the onions and garlic & sear the chicken in this pot for 3 mins (each side), then remove the chicken from the pot. Now in the same pot add 3 cups of water & bring it to boil then add the remaining mandi spice, check the salt, then add rice & let it cook 75%.

STEP 3

In the meantime whilst you have preheated the oven, cover the pot with an aluminium foil and puncture holes in the foil. Place the chicken on top of the foil and cover with foil and place in the oven & cook for an hour at 180°. Uncover and check rice has fluffed up. Now remove foil & place the chicken directly on rice and cook for 15 more minutes.

STEP 4

 For the final step, inside the pot place a metal bowl with burning charcoal and pour some ghee over it, then cover it quickly with a lid and place several tea towels over it to trap all the smoke inside. Keep it closed for several minutes.

STEP 5

Serve in a traditional Saudi way- Place rice on a large platter with the chicken on top along with an accompaniment of salsa.

Salsa (optional)- made from 3 large tomatoes, 3 cloves of garlic, 2 red chillies, juice of 1 lemon, 1/4 cup water blended together.
