The Winner
Recipe For Plantain Skewers
INGREDIENTS
Bell peppers
Plantains
Coconut milk
Onions
Tomatoes
Garlic
Cinnamon powder
Thyme
Bamboo skewers
METHOD
STEP 1
Wash and peel the plantains and cut them as they are an inch per piece.
STEP 2
Cut the bell peppers into cubes.
STEP 3
Marinate the plantains and peppers in thyme, paprika, salt, black pepper and garlic powder.
STEP 4
Bake the plantains in a 200°c oven for 15 minutes.
STEP 5
Using a pan, roast your peppers on both sides for about 4 minutes each.
STEP 6
Using bamboo skewers pierce through one plantain then a skewer in that sequence. Each skewer should have 3 plantains.
Instructions For The Sause
STEP 1
Fry your onions and garlic till brown in colour.
STEP 2
Add in the cinnamon powder and cook while stiring for 3 minutes.
STEP 3
Add in your tomatoes(finely chopped/blended). Let it simmer for 10-15 minutes on low heat.
STEP 4
Add in the coconut milk and let it simmer for 20 minutes…
Serve in a sauce-pot while hot and garnish with some fresh herbs
