HOMEMADE GRANOLA

INGREDIENTS

400g oats
1 cup honey
1 cup flavourless cooking oil
2 Tbsp sultanas
2 Tbsp raisins
2 Tbsp dried cranberry
2 Tbsp coconut flakes (optional)
4 Tbsp unroasted cashew nuts (or any nuts)

METHOD

STEP 1
In a suitable bowl add the oats, honey, oil and raw nuts of your choice along with some coconut flakes, and mix everything until evenly coated with the oil and honey.

STEP 2
Spread the coated mixture on an oven tray lined with a greaseproof paper/parchment paper and cook on medium heat(160C) for about 10–15 minutes, or until it’s evenly browned and slightly toasted. Note: You have to keep checking after every 5 minutes to ensure even browning/toasting.

STEP 3
Once achieved the desired toasting/browning, scrape off from the tray to avoid it from cooling and lumping together, then add the dried fruits according to your preference (you can add more or less depending on the variety of fruits available).

STEP 4
If you like coconut, add more coconut flakes, to your granola before serving.

Serve plain as a snack, or with yoghurt and fresh fruits for breakfast!
