HERB & LEMON PRAWN BITES RECIPE
1kg prawns cleaned and deveined
Chives finely chopped (2x bunches)
Mint finely chopped (1x bunch)
Parsley finely chopped (2x bunches)
Coriander finely chopped (1x bunch)
Lemon zest of 2 lemons
30ml of lemon juice
Salt and pepper to taste
Cocktail sauce (You can make your own by mixing mayonnaise, Tobasco, ketchup & lemon juice)
In a large bowl mix together the herbs & lemon zest with 80ml of oil.
Add the prawns to the mixture and leave to marinate for at least 6 hours or overnight.
Once marinated, season the prawns with salt, pepper and lemon juice.
In a heated pan add some oil and fry the prawns until a nice orange colour on both sides.
Serve the prawns with the cocktail sauce!
