Fish Fingers With Tartar Sauce – Chef Khan’s Finger-Licking Recipe

FISH FINGERS WITH TARTAR SAUCE (serving for 5)

INGREDIENTS (Fish Fingers)

½ kg of fillet fish (cut into strips evenly)
½ cup corn flour to dust the fish (season with a teaspoon of salt & pepper)
2 eggs whisked
1 cup of corn flakes crushed till almost fine
Oil to fry
For the marination
1 teaspoon of each ginger and garlic paste
2 teaspoon of salt
1 teaspoon of black pepper powder
1 tablespoon of soy sauce
2 teaspoons of tabasco sauce
1 ½ teaspoon of chili flakes
2 tablespoons of lemon juice

 

METHOD

STEP 1
Cut the fish fillet into nice medium strips evenly and marinate with the ingredients listed for the
marination. Marinate for at least 20 minutes.

STEP 2
Drain out any excess liquid from the fish.
Dust the fish strips in the corn flour and roll them through your hands to give them nice shape.
Pass them through the whisked eggs and lastly dip them into your crushed cornflakes, making sure
they are evenly coated all round.

STEP 3
Fry the fish fingers for at least 5 minutes till nice and golden brown.

 

INGREDIENTS (Tartar Sauce)

½ cup mayonnaise
20 grams of chopped parsley
10 grams of chopped pickled gherkins
10 grams of chopped pickled capers
1 tablespoon of lemon juice
5 grams of mint chopped finely
A pinch of salt and pepper to taste
¼ of a boiled egg chopped (optional)

 

METHOD

STEP 1

Mix all the ingredients together nicely and taste to check if seasoning is fine.

STEP 2
Lastly to plate, cut some lemon wedges and serve your fish fingers with tartar sauce on the side.
