FISH FILLET WITH SWEET POTATOES & CREAMED SPINACH
INGREDIENTS – Fish Fillets
2 Fish fillet
Salt and pepper
Oil for cooking
Pat dry the fish on both sides and season with salt and pepper.
Heat a pan and add little oil. Cook the fish on the hot pan allowing 3 minutes on each side cooking time. Fish is cooked when evenly browned on both sides and the inside is white, flaky, and moist.
INGREDIENTS – Sweet Potatoes
2 large sweet potatoes
Pepper to taste (optional)
Oil or butter
Peel the potatoes and cut into smaller pieces and boil in salty water until cooked.
Mash them to your desired consistency adding a little black pepper(optional) and finish by adding little olive oil, or butter to enhance the flavour.
INGREDIENTS – Creamed Spinach
2 large bunches of spinach
1 large onion
Clean the spinach and leave the leaves whole.
Blanch the spinach in boiling salted water. After about 3 minutes of boiling, drain off the water and run cold water to the spinach to prevent it from cooking.
Cut into the desired size and set aside.
Cook the onion and garlic with little oil for about 2 minutes on medium heat but don’t allow them to brown.
Add the cut spinach and stir and allow to cook for about 1 minute.
Add the cream and allow to boil then turn off the heat.
