EGGS IN SPICY TOMATO SAUCE (SHAKSHUKA) RECIPE
Serves 6
Prep Time: 10 minutes
INGREDIENTS
3 tomatoes
½ tbsp butter/oil
1 onion
3 cloves garlic
2 red chillies
Salt & pepper (to taste)
4 eggs
METHOD
STEP 1
Start by peeling the tomatoes then chopping them into small pieces.
STEP 2
On a pan, melt the butter then add the onion and garlic and cook until soft.
STEP 3
Add the chillies, chopped tomatoes, salt and pepper, then stir and allow to cook for 3 minutes on low heat.
STEP 4
Taste and adjust the seasoning. Then make 3 holes in the tomato sauce where the eggs will go and crack an egg at the centre of each.
STEP 5
Season each egg and cover the pan to cook the egg to your liking.
Serve hot with toasted bread spread with some butter!
