It’s time for some pasta and what better dish to try out, other than Chef Aakshar’s Egg Yolk Ravioli? Each ravioli is loaded with an egg yolk and delicious ricotta filling. They are like tiny surprise packages that when one cuts into, the surprise element; the egg yolk oozes from inside the ravioli which is not only pleasant to the eye but to the palate. INGREDIENTS For The Dough

2 cups flour
3 whole eggs
3 egg yolks only
*total 6 eggs
1/2tsp salt

INGREDIENTS For The Sauce

500gms butter
500gms sage
Salt
3 garlic cloves

INGREDIENTS For The Filling

3 cloves chopped garlic
250gms ricotta
2tbs chopped chives
2tbs chopped basil
2tbs chopped sage
1/2tbs chillies flakes
Salt
8 egg yolks

METHOD For Preparing The Dough

STEP 1
Mix all the ingredients for the dough and knead well for about 5mins then wrap and refrigerate for an hour.

METHOD For Making The Sauce

STEP 1
Melt butter in a pan until almost burnt then add the sage and a tablespoon of lemon and whisk then add in the salt and chopped garlic.

METHOD For Making The Filling

STEP 1
Mix all the ingredients together apart from the egg yolk to form a paste.

METHOD For Making The Ravioli

STEP 1
Roll the dough thick on a dusted surface, then add in the egg yolk and ricotta filling making sure the yolk doesn’t break. Now cover this with another rolled out dough and cut into a disc shape & seal the edges of the ravioli using a fork and some water as needed.

STEP 2
In a cooking pot, pour some water and let it come to a rolling boil then add some salt and the ravioli and allow to cook for 7mins.

STEP 3
 Remove the ravioli after 7 mins and toss in the sauce.

Serve hot & enjoy this pasta dish!
