Chef Raphael’s Egg & Sweet Corn Fritters is another recipe to try out this Ramadan. It’s not only delicious but is extremely quick and easy to make which makes it perfect to make for your Iftaar or your Shuhur!
EGG & SWEET CORN FRITTERS
EGG & SWEET CORN FRITTERS RECIPE
1 x 400g tin of sweet corn (drained)
1 cup plain yoghurt/mala
½ cup ugali flour
1 cup self-raising flour
1 teaspoon salt and pepper to taste
Using a wooden spoon, beat eggs, corn and yoghurt/mala together.
Add ugali flour, flour and seasoning.
Heat oil in a frying pan and drop tablespoons of mixture into the pan, slightly flattening each with the back of the spoon. Cook for 2-3 minutes on each side until golden brown.
Serve with sausages or have them plain as a snack!
