Creamy Mushroom Pasta

Creamy Mushroom Pasta is an extremely easy-to-cook dish that is perfect for a weeknight dinner. It’s a simple recipe made with basic ingredients yet at the same time packed with flavours; creamy & mushroomy! Try this recipe as it’s definitely going to be your new weeknight dinner favourite!

CREAMY MUSHROOM PASTA (servings for 3-4)

INGREDIENTS

500gms button mushrooms (sliced)
250-300gm of shells
2 cups water to boil the pasta
2 cloves garlic (finely chopped)
2 tbsp butter
2 tbsp all-purpose flour
1 tsp pepper
2 cheddar cheese slices
2 cups of milk
2 tsp salt to taste
3tbsp oil
½ tsp mixed herbs

METHOD

STEP 1
In a non-stick pot add water and a 1tbsp oil with 1tsp salt and allow to boil. Once boiling, add the shells and let cook for 8-10 minutes. Once cooked turn the heat off, drain the water out and set aside.

STEP 2
In a non-stick pan add 2 tbsp oil, the mushrooms and garlic. On a medium flame, cook the mushrooms for a couple of minutes until tender & season with ½ tsp pepper and salt-to-taste. Once cooked, take out the mushrooms in a bowl.

STEP 3
In the same non-stick pan melt butter over medium heat. Once melted add the flour and whisk the flour until smooth. Now slowly add in the milk, whisking continuously until smooth and allow to cook for 2-3 minutes until sauce thickens (to your desired consistency). Season with ½ tsp pepper and salt-to-taste. Once the sauce is thick, add 2 cheese slices and whisk until melted and well-combined with the sauce.

STEP 4
On low to medium flame, to the non-stick pot with shells add the creamy sauce, tender mushrooms and ½ tsp of mixed herbs and mix until all combined. Now plate out your pasta and serve hot!
