INGREDIENTS
1 kg tender beef, cut into chunks
2 large onions, thinly sliced
2 cups sliced mushrooms
⅓ cup cooking oil
1 cup cooking cream
1 sprig rosemary
Salt & black pepper to taste
METHOD
STEP 1
Heat the cooking oil in a large pan over high heat. Add the beef and cook until it begins to brown, avoiding frequent stirring so that the meat sears rather than stews.
STEP 2
Add the sliced onions and continue cooking for about 1 minute, then stir and allow the onions to soften and cook with the beef.
STEP 3
Add the sliced mushrooms and stir them into the beef and onions. Continue cooking over high heat, then season with salt and black pepper.
STEP 4
Add the rosemary sprig and continue cooking until the beef is cooked through and the mushrooms have softened.
STEP 5
Pour in the cooking cream and stir well to combine, allowing it to simmer gently until it forms a creamy gravy.
STEP 6
If the beef is still slightly tough, add a splash of water, cover the pan and reduce the heat. Allow it to simmer for approximately 30 minutes, or until the beef is tender.
STEP 7
Remove the rosemary sprig and serve the creamy beef and mushroom stew hot with rice and a side of vegetables.
