COCONUT, PUMPKIN & SPINACH CURRIED PASTA
COCONUT, PUMPKIN & SPINACH CURRIED PASTA RECIPE
3 cups penne/fusilli pasta
1 cup cubed pumpkin
1 cup spinach
1 large onion, chopped
2 cloves garlic sliced
2-3 tsp curry powder
2 tomatoes (blended)
1/2 cup coconut cream/milk
In boiling salty water, cook the pasta according to the cooking time on the packet.
In a pan fry the onion on medium heat until soft.
Add the pumpkin and fry for about 4 minutes while covered, on low heat or until they become soft. You can add little water to prevent from sticking
Add the garlic and allow to cook for about 1 minute then add the curry powder and mix well, allowing to cook for another 1 minute.
Add the blended tomatoes allowing to come to a simmer. Add the spinach & cook for about 1 minute.
Add the cooked pasta and stir and finally add the coconut milk. Cook and allow for the sauce to reduce slightly.
