COCONUT FISH
COCONUT FISH (4 Servings)
INGREDIENTS FOR MARINADE
½ kg fillet fish
1 teaspoon salt
2 ½ tablespoon lemon juice
1 ¼ teaspoon red chili powder
Some flour to dust
METHOD FOR MARINADE
STEP 1
Marinate the fish for at least 45 minutes and dust it with flour and shallow fry it then set aside.
INGREDIENTS
2 onions grated
1 teaspoon ginger paste
1 teaspoon garlic paste
½ teaspoon turmeric powder
1 ½ teaspoon salt
1 teaspoon red chilli powder
4 tomatoes blended
250ml coconut cream
4 tablespoons oil
½ bunch coriander chopped to garnish
1 lemon cut into slices to garnish
METHOD
STEP 1
Heat oil in a pan and add in grated onions and cook till brown and then add the ginger & garlic
and cook for 2 minutes.
STEP 2
Add in blended tomatoes and cook for at least 10-12 minutes and then add salt, red chilli
powder, turmeric powder and cook for another 2-3 minutes.
STEP 3
Once masala is cooked add in your coconut cream and add your fish and cook on low heat
for 2 minutes.
STEP 4
Serve on a dish and garnish with coriander and lemon slices.
Serve with rice.
