COCONUT CREAMED SPINACH

COCONUT CREAMED SPINACH RECIPE (Serving For 3)

INGREDIENTS

2 bunches of spinach
150 ml coconut cream
1 tablespoon salt
½ tablespoon of black pepper
1 ½ tablespoons of butter
3 eggs (optional)

METHOD

STEP 1
Remove the stems from the spinach and wash it well. Boil water and add salt once it gets to a boil, add in your spinach and cook for 2-3 minutes. Remove this from the boiling water and pass through cold water to avoid further cooking. Squeeze out all the excess water from the spinach once cooled, chop your spinach finely.

STEP 2
In a cooking pot, melt the butter and put in the spinach together with the coconut cream. Cook this for around 2 minutes and season with salt and pepper.

STEP 3
Add some butter on a nonstick pan and cook a sunny side up egg and serve with your cream spinach.
