CLASSIC LEMONADE & CHICKEN SANDWICH
CLASSIC LEMONADE INGREDIENTS (Serves 6)
6 large lemons squeezed
1 cup sugar
6 cups cold water
Lemon slices to garnish
Squeeze out all the juice from the lemons, add in sugar and cold water and stir continuously
until sugar has dissolved.
Taste and adjust with water if need be.
Serve chilled and garnish with lemon slices.
CHICKEN SANDWICH INGREDIENTS (Serves 2)
1 breast chicken cut into small cubes marinated with a ¼ teaspoon each of -salt, pepper and lemon juice- (Marinate for 20-30 mins)
½ a red onion chopped
¼ green capsicum cut into small cubes
2 stalks of coriander chopped
¼ cup mayonnaise
½ cup mozzarella cheese grated
4 slices of white bread
In a non-stick pan drizzle some oil and cook your marinated chicken and set aside.
In a mixing bowl put in your cooked chicken, onions, capsicum, coriander, mayonnaise and mix well.
Place your mixture on top of each bread slice and sprinkle your cheese on top and cover with the other bread slice. Now heat your sandwich maker or grill pan with some butter and place your sandwiches and cook both sides until cheese has melted and bread has got golden brown.
