 CHOCOLATE CAKE WITH DELICIOUS BUTTERCREAM FROSTING RECIPE

INGREDIENTS FOR THE CHOCOLATE CAKE

½ cup (50 grams) unsweetened cocoa powder
1 cup (240 ml) boiling hot water
1⅓ cups (175 grams) all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup (113 grams) margarine
1 cup (200 grams) granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract

METHOD

STEP 1
Preheat the oven to 190C. Line a round baking tin with greaseproof paper.

STEP 2
In a small bowl stir the boiling hot water and cocoa powder until smooth. Let cool to room temperature.

STEP 3
In another bowl, whisk together the flour, baking powder, and set aside.

STEP 4
In another bowl, beat the margarine and sugar until light and fluffy using a hand mixer or whisk.

STEP 5
Add the eggs, one at a time, beating until smooth while scraping down the sides of the bowl as needed. Beat in the vanilla extract.

STEP 6
Add the flour mixture and beat only until incorporated, then add the cooled cocoa mixture and stir until smooth.

STEP 7
Pour the cake mixture in the baking tin and bake for about 40 minutes or until risen, springy to the touch, and a toothpick inserted into the cake comes out clean.

STEP 8
Remove from the oven and place on a wire rack to cool. Once the cake has completely cooled, frost with icing.

 

INGREDIENTS FOR THE PEANUT BUTTER FROSTING

180g peanut butter
220g margarine/butter
100g icing sugar

METHOD

STEP 1
Beat the margarine and peanut butter until smooth and creamy using a hand mixer or whisk (for about 1 minute). Add the icing sugar little at a time and beat until it is light and fluffy (for about 2 minutes).

STEP 2
Increase the speed to medium-high and beat until frosting is smooth and glossy (about 2 -3 minutes).

Decorate the top of the cake with cake sprinkles & serve!
