CHICKEN IN SPICY PEANUT SAUCE

 CHICKEN IN SPICY PEANUT SAUCE RECIPE

INGREDIENTS

½kg chicken breast cut in cubes
2 medium onion
4 garlic cloves (sliced)
½ cup red/green pepper (1 piece of each)
1-2tsp chilli flakes (optional)
20ml soy sauce
2tbsp peanut butter
30gm honey

METHOD

STEP 1
In a hot pot/pan with little oil, cook the chicken to brown evenly, then add the onion (after about 2 minutes) & brown as well. Cook the chicken while on high heat.

STEP 2
Add the chilli flakes, salt and pepper whilst the browning of the chicken continues, then when evenly browned reduce the heat and add the garlic & cook.

STEP 3
Cover the pot to cook on low heat, adding little water to prevent the chicken from sticking to the pot. This should take about 5 minutes (if using chicken on the bone it will take about 12 min).

STEP 4
When the chicken is cooked, add the peppers and stir and cook for 2 minutes with the cover off.

STEP 5
Add the peanut butter and stir in the chicken until fully melted. Add some water to form the gravy and allow it to come to a boil and cover.

STEP 6
Adjust the taste by adding a little honey(optional) and a little soy sauce to get the gravy to a darker brown colour.

 

Serve with rice and some vegetables on the side!
