Chicken Biryani With Raita

CHICKEN BIRYANI WITH RAITA(serves 5-6)

INGREDIENTS FOR BIRYANI

1 kg chicken  (curry pieces)
1 kg pureed tomatoes
1 kg chopped onions
1/2 kg potatoes (fried & diced)
3.5 cups par cooked rice
2 cinnamon sticks
8 peppercorns
1 tsp cumin seeds
5 cloves
3 tbsp cooking oil
1 pint yogurt
1 tbsp garlic paste
1 tbsp ginger paste
1 tbsp green chilli paste
1 tbsp tomato paste
1 tsp garam masala
Salt to taste
Orange food colour
Water

RAITA INGREDIENTS

1 cup yoghurt
1/2 cup chopped tomatoes
1/2 cup chopped onions
2 tbsp chopped coriander
1/2 tsp chat masala

METHOD FOR RAITA

In a bowl mix all the ingredients together and serve on the side to compliment the biryani.

METHOD FOR BIRYANI

STEP 1

Brown onions in 2 tbsp cooking oil & keep aside. In another pan, cook chicken pieces in remaining oil add one chopped onion and ginger & garlic pastes along with the spices and yoghurt. Cook till tender then add the potatoes.

STEP 2

In a separate pan, cook pureed tomatoes with tomato paste, green chilli paste and salt to taste until sauce thickens. Simmer for 20 minutes.

STEP 3
Now add the thickened tomato sauce to the chicken and cook for another 7-10 minutes till well combined.

STEP 4
After the masala (thick chicken gravy) is ready, in a wide/tall pan, begin to layer the rice and gravy alternatively starting with rice and then the chicken. This should make about 2 – 3 layers, finishing off with the rice.

STEP 5

Mix orange food coloring in a little bit of water and pour over the top rice layer along with some fried onions and cover with foil. Steam the biryani for further 20 Minutes.
Serve hot with Raita!
