Buckthorn jam is an unusual yet amazing recipe to try out, and it is extremely easy to make at home. If you are not fond of over sweet jams, then use to every part fruit half part sugar, however, buckthorn is rather bitter, hence our Chef has used ⅔ parts sugar to every part of fruit. 1 part buckthorn
⅔ part sugar
2 dried ancho chilli or 1 kg of berry
Small teaspoon of ascorbic acid or any other preservatives available in Kenya, if not lemon juice
Pinch of sea salt
In a pot, add all the above & let it simmer for about 20 min.
Hand blend the mixture and pass it through a sieve in an airtight jam bottle to store.
Serve with some form of strong cheese like blue cheese & enjoy!
