Beef In Guinness Stew – H&S Christmas Recipe Of The Week

BEEF IN GUINNESS STEWbeef in guinness stew

 BEEF IN GUINNESS STEW

Serves 3-4
Prep Time: 5 minutes
Cooking time: 45-60 minutes

INGREDIENTS

½ kg boneless beef
30ml oil
2 medium-sized carrots (cubed)
2 onions (cubed)
4 garlic cloves (each cut in 2)
1 sprig of fresh thyme (chopped)
2 tbsp tomato paste
300ml Guinness
2 zucchini (cubed)
2 tbsp corn flour
Salt and Pepper (to taste)

METHOD

STEP 1
Cook the meat in a preheated hot pot while on high heat. Allow to brown on all sides before removing and setting the meat on a plate.

STEP 2
Add the onions and carrots to the hot pot and while on high heat, brown the vegetables, adding little more oil if necessary.

STEP 3
When the vegetables are browned, add garlic, chopped thyme and tomato paste and cook for 1 minute.

STEP 4
Return the browned meat to the pot giving a good stir before adding the Guinness.

STEP 5
Reduce the heat when it starts to boil, then simmer while covered for about 45 minutes, adding more Guinness/water if necessary.

STEP 6
Dissolve the corn flour in little cold water and pour into the stew and allow to cook and thicken the stew.

STEP 7
Add the zucchini or any other of your preferred soft vegetables and allow to cook for 5-10 minutes.

STEP 8
Taste and adjust the seasoning by adding pepper and salt.

STEP 9
The meal will have a slightly bitter taste but to balance the bitter taste, add 2 tsp of sugar then stir.
