Looking for a quick & hearty meal? Chef Aakshar’s Bacon & Chicken Risotto is a worthy dish to try at home. It’s perfect for two and can be an amazing date-night dish to make. It’s easy & quick to prepare & takes just about an hour to make. If you don’t like or eat bacon you can even try this dish without bacon!  BACON & CHICKEN RISOTTO RECIPE

INGREDIENTS

2tbsp cooking oil
1 medium onion (peeled and & sliced) 
2 boneless chicken thighs or breast (skinned and cut)
3 pcs bacon (chopped into pieces)
125g risotto rice
1 chicken stock cube
100g peas
Salt and black pepper (to taste)
1 tbsp freshly chopped parsley (optional for garnish)

METHOD

STEP 1
Add oil to a pan, once heated, add the onions & cook until it softens then add in your chicken and bacon, and continue to cook over medium heat until the chicken is cooked.

STEP 2
To the same pan add the risotto and stir it well, then add in the stock cube and pour in some boiling water, simmer the risotto until the water is almost absorbed and then add more water to the pan. Leave the risotto & let it simmer gently, and keep adding water as required until the rice is almost cooked. (Note: A total of about 300ml boiling water will be needed).

STEP 3
Lastly, add the peas and cook for 3-5 mins, until they are just tender. Check that the rice is cooked and if it is still al dente, let it cook for a little longer. This should take about 15-20 mins. Season to taste.

 Garnish with parsley & serve hot!
