Roasted Tomato Soup by Chef Khan is a delicious recipe full of incredible flavours. This winter try out Chef Khan’s version of the traditional tomato soup with a twist!
ROASTED TOMATO SOUP?
ROASTED TOMATO SOUP (SERVING 4)
INGREDIENTS
12 ripe tomatoes cut into halves
5 garlic cloves crushed
1 tablespoon black peppercorns crushed
2 tablespoons mixed dry herbs
3 tablespoons olive oil
1 onion chopped
1 cup of water (add more if need be)
½ tablespoon sugar
1 tablespoon salt
2 tablespoons fresh cream
METHOD
STEP 1
Preheat oven to 180 degrees.
STEP 2
Place your tomatoes cut into halves onto your oven tray and sprinkle crushed garlic, mixed herbs, black pepper corns and drizzle some olive oil on top. Roast this in the oven for 15-20 minutes.
STEP 3
In a cooking pot sautée onions and place your cooked tomatoes in there and cook for 2-3 minutes and add in your water and once boiled remove from the pot and blend this until its smooth.
STEP 4
Return blended mixture back into your pot and heat this, then add in your salt and sugar. Adjust seasoning if need be and lastly add the fresh cream.
Serve hot!
