It’s Diwali, an Indian festival of lights and for this reason, Chef Aakshar has a savoury recipe for you; White Dhokla. This soft & spongy steamed snack is popular among the Gujratis but loved by many Indians. It is an all-time favourite snack, starter and can even be devoured for breakfast. For this reason, we had to include this as one of the Diwali Specials! It’s quick and easy to make and perfect to serve the family and guests with tea as a tea-time snack! WHITE DHOKLA RECIPE
INGREDIENTS
500g black-eyed beans
300g fenugreek (methi) chopped
2tbsp bicarbonate of soda
3tbsp oil
400g spinach chopped
3 tbsp green chilli paste
1/4tsp asafoetida (hing)
1 tbsp salt
METHOD
STEP 1
Soak the beans overnight in about 250ml water 250ml & then blend.
STEP 2
Now mix all the ingredients together adding the bicarbonate last & mix well.
STEP 3
Pour the batter into well-greased trays and steam for 10-15 mins.
Cut into squares or diamonds & serve cold!
