VERY BERRY MUFFINS RECIPE

Makes 24 Small Very Berry Muffins

INGREDIENTS

950g self-rising Flour
290ml oil
4 eggs
290g sugar
200g berries(raspberries, strawberries, fresh/frozen)
100ml water or fruit juice (apple/orange)

METHOD

STEP 1
Start by preparing your muffin tins by greasing lightly with a little oil & pre-heat the oven to 180ºC (170ºC Fan).

STEP 2
Sift flour and set aside in a large bowl. Mix the fruits, sugar, eggs, water/fruit juice in a separate bowl and oil then add to the sifted flour. With a wooden spoon or by hand, mix all the ingredients together to form a soft dough.

STEP 3
Fill the muffin pan 3/4 full using a spoon or ice cream scoop and bake in the preheated oven for approx. 25 minutes or until golden brown.

STEP 4
Remove from the baking mould while still warm and sprinkle with icing sugar and enjoy warm.

 

Note: You can halve the ingredients to make 12 muffins!
