SURF & TURF (LOBSTER & STEAK) RECIPE
INGREDIENTS
FOR THE LOBSTER
4 long wooden skewers
8 tablespoons butter
4 tablespoons lemon juice
1 teaspoon sea salt, divided
4 shell-on lobster tails, with underside membrane, removed
Garlic Butter Sauce
FOR THE STEAK
1 Ribeye steak or cut of your choice
1 teaspoon ground black pepper
4 teaspoon extra-virgin olive oil
2 lemon, cut into wedges
4 tablespoons fresh parsley
Fresh Horseradish Aioli Sauce (optional)
METHOD FOR THE LOBSTER
STEP 1
Preheat the oven at 450°F.
STEP 2
Soak the wooden skewers in water for at least 25 minutes.
STEP 3
In a small microwavable dish, mix the butter and lemon juice then melt & reserve to cool.
STEP 4
Remove the skewers from the water and insert through the flesh at the bottom of the tail to the upper portion. Place the prepared lobster tails on a baking tray, shell side down, and brush melted butter over the lobster tail. Sprinkle with salt and bake for 10 mins.
METHOD FOR THE STEAK
STEP 1
Heat a cast-iron skillet to smoking hot.
STEP 2
Divide the steak equally and brush both sides of each steak with oil and season with salt and pepper.
STEP 3
Add steaks to the hot skillet and cook for 5-10 minutes on the first side (Do not move during cook time). Then flip the steaks and cook on the reverse side for an additional 5-7 minutes until they are medium-rare (at about 130°F) or to the desired doneness, 10 to 12 minutes total. Transfer to a plate and allow to rest 5 minutes.
Serve with lobster on top of the steak and drizzle some sauce on the side!
