SAUSAGE & PINEAPPLE FRIED RICE
SAUSAGE & PINEAPPLE FRIED RICE RECIPE
Serves: 3-4

Cooking Time: 10 min
INGREDIENTS
2 ready to eat smoked sausages (Choma sausage)
½ cup diced coloured peppers
1 diced onion
1 tsp curry powder
½ tsp turmeric powder
3 cups of cooked white rice
Salt to taste
½ cup pineapple
½ cup raisins
METHOD
STEP 1
On a heated pot with little oil, cook the sausages until evenly lightly browned. Remove them from the heat and drain on a kitchen paper towel.
STEP 2
Add the onion and peppers and cook for a few seconds then throw in the curry powder and the optional turmeric powder. Cook the mixture, while stirring for 1 minute & add little more oil if necessary.
STEP 3
Add the cooked rice and stir until it all turns yellowish. Allow getting hot, stirring to avoid it from sticking. Season with salt to taste.
STEP 4
Add the Chopped pineapples, raisins, and the cooked sausages and stir fry for about 2-3 minutes.
STEP 5
When the rice is fully heated, turn off the heat and serve immediately while hot.
